Ingredients:
60 mL (4 tablespoons) olive oil, divided
1 shallot, diced
30 mL (2 tablespoons) freshly squeezed lemon juice
15 mL (1 tablespoon) lemon zest
15 mL (1 tablespoon) chopped fresh thyme (or herb of your choice)
3 cloves garlic, minced
10 mL (2 teaspoons) Dijon mustard
Salt and freshly ground black pepper, to taste
900 grams of boneless, skinless chicken breasts, cut into 2.5 cm (1-inch) chunks
1 red onion, cut into 3.8 cm (1 1/2-inch) pieces
Instructions:
In a medium bowl, combine 60 mL (4 tablespoons) olive oil, shallot, lemon juice, lemon zest, thyme (or chosen herb), garlic, Dijon mustard, 1 1/2 teaspoons salt, and 1 1/2 teaspoons pepper.
In a 1-liter (large) resealable plastic bag or large bowl, combine chicken and olive oil mixture; marinate for at least 2 hours overnight, turning the bag occasionally. Drain the chicken from the marinade.
Thread chicken and onion onto skewers. Brush with the remaining 60 mL (4 tablespoons) olive oil; season with salt and pepper, to taste.
Preheat a grill or cast iron grill pan over medium heat.
Add skewers to the grill or grill pan, and cook, turning occasionally, until the chicken is completely cooked through, reaching an internal temperature of 74 degrees Celsius (165 degrees F), about 10 minutes.
Serve immediately.
