A hearty blend of roasted spices, za’atar consists of thyme, sesame seeds, sumac and oregano. Used to flavour bread, or as a seasoning for poultry and fish, tangy, refreshing and herbaceous za’atar can be stirred into hummus and other dips, or used as a flavouring for roasted vegetables. For an extraordinarily fragrant, fresh-from-the-oven flatbread, za’atar is combined with olive oil and the mixture is spread over the bread before it is baked.
