The essence of the quintessential Jewish dish, cholent, is preserved in Heinrich Heine's verses, 'Schalet is the food of heaven... Schalet is the pure ambrosia.' The preparation for this rich, hearty stew usually begins with sautéing the onions in schmaltz and subsequently adding beef brisket, potatoes, garlic, vegetables, spices, and legumes from the cholent mix. It may be sweetened with honey, caramelised sugar, or fruit, and spiced with cloves, or paprika and a bay leaf. Cholent is essentially a slow cooked stew and the first whiff of it will make your mouth water. Cholent mix is a blend of white beans, red kidney, pinto, lima, fava beans and barley. Although cholent stew can be served as a meal in itself, we recommend that you dish it up with Lewis & Son traditional pickled cucumbers and beetroot kraut, for the ultimate flavour experience.
